Day 7: Overnight Oats

Day 7: Sunday January 25, 2015

All week I had been making myself oatmeal each morning.

“Boil 1 cup of water with a pinch of salt add cup oats. Cook one minute, then eat”

I believe I did this in my sleep half the time.

I mentioned this at work one day and Stephanie Valle mentioned that I should try overnight oats.

I thought it was a brand of oatmeal that was going to cost me a fortune, but luckily it wasn’t.

Overnight oats are exactly what they sound like, oatmeal soaked overnight in the refrigerator.

You could add fruit or use any variety of milk you desired just as long as you allowed them to soak overnight.

This was too good to be true so I had planned to make them over the weekend so I would not mess up my morning routine.

This was the morning I was to taste my overnight oats creation as I had prepared it the night before.

It was a mashup of many recipes for this ingenious meal.

Below is how I made my overnight oats:

1/3 cup oats 2/3 cups almond milk Half a banana, mashed 1/3 cup frozen blueberries Mix all ingredients together Refrigerate oats at least 3 hours or overnight

I discovered that overnight oats were not only a great time saver but also a very filling meal.

I found many overnight oats recipes so I will be posting them on our Pinterest board as I try them throughout the week.
