Reduce everything except the pears in a sauce pot by Place each pear in plastic bag with 1/8 of the reduction Seal in cryovac for sous vide cooking 12-18 hours before service at 140 F

Chocolate Ganache

Heavy whipping cream

Heat cream in a sauce pot and pour over chocolate. Be sure that all chocolate is melted in cream
