Back-to-school: Making a healthy lunch at home
Chicken wrap with sun dried tomato pesto
PESTO RECIPE
1 cup sun dried tomatoes, rehydrated with 1 cup hot water
4 each garlic cloves
1 cup spinach
1/4 parmesan, grated
1/4 c grapeseed oil
1/2 cup almonds, dry roasted
STEPS
Puree all ingredients in a food processor. Makes about 4 cups.

BUILDING THE WRAP
Heat a tortilla or wrap on stove
Spread 1 tbsp of cream cheese
Place 1 cooked chicken breast, sliced in half, on wrap
Place 1/2 cup spinach and 5 slices of tomato over the chicken and spread 1/4 cup pesto over everything. Season and roll.
