Record-breaking enchilada makes its return to Whole Enchilada Fiesta

The world’s biggest enchilada is back, but who’s the man behind the recipe?

Roberto Estrada is the mastermind of the enchilada that once ranked in the Guinness Book of World Records.

Then 10-foot enchilada will be made at this year’s Whole Enchilada Fiesta which kicked off on Friday.

The even is all weekend long.

Estrada tells ABC-7 it’s good to be back.

“After missing last year, I feel very good about coming back and making the enchilada again,” Estrada said.

Last year, Estrada could not make the giant enchilada because of problems with the equipment. People in the community got together and donated the money to buy new equipment and bring the famous enchilada back.

Estrada said “the burners, the cooker, the press and the serving plate” are all ready to go.

This Sunday Estrada and his team will get together to make the 10-footenchilada. Filled with red chile and cheese, the record-breaking enchilada will feed thousands.

“We use 750 pounds of masa. Each tortilla is 250 pounds. We stack three tortillas. We use 75 gallons of red chile, 175 pounds of cheese, 50 pounds of onions,” Estrada said.

Unfortunately, Estrada’s enchilada no longer holds the world record for largest. Someone in Mexico made a giant rolled enchilada that beat him.

Estrada’s is still technically, unofficially, the largest flat enchilada in the world.

Estrada has been doing this for more than 30 years. He hopes to keep going for many more.

“I’m in good health, thank God. I think I can go, I don’t know how many years, but I’ll try,” Estrada said as he laughed.

The chefs will start making the enchilada Sunday at 10:30 a.m. It will be served in the afternoon at the Whole Enchilada Fiesta in Las Cruces.
