FIT FOR ’15 05.22.15: Homemade hummus

BASIC HUMMUS

2 Cups chickpeas/garbanzo beans canned or cooked
3 cloves garlic, minced
3/4 cup Tahini (may be purchased at specialty grocery stores)
Olive oil (add sparingly for desired texture)
1/4 cup lemon juice (from one lemon)
1 teaspoon salt
1/4 teaspoon pepper
dash Cayenne pepper
1 tablespoon parsley
Optional mix-ins: roasted green chile, rehydrated sun-dried tomato

Place chickpeas in bowl of food processor and process until smooth.
Add remaining ingredients (except parsley) until well blended.
Place part or all the hummus in a bowl and stir in any additional ingredients to taste.
Taste for seasoning, cool (if using beans that were freshly cooked), add parsley for garnish and serve.
