Sugar Detox: Day 20

Day 20: Knock Knock… Who’s there?…. Supermegafoxyawesomehot Dinner, That’s Who.

I just made the most amazing meal. Pineapple peach crock pot chicken with strawberry cheesecake mousse for dessert.

Does this mean I binged again?

Heck no.

I’m just a crock pot goddess.

Here’s the recipe. Are you ready? It’s super hard to make. Just kidding, the whole meal took maybe 15 minutes to prepare.

Pineapple Peach Crock Pot ChickenOne 26-ounce jar of Wal-Mart (Great Value brand) Pineapple Peach Chipotle Salsa One package of chicken tenders or chicken breastOne crock potSun Chips or Tortilla ChipsShredded cheddar cheese

Put the chicken in the crock pot and add the salsa. Turn on low for five to six hours for the best results. If you’re in a hurry, three to four hours on high also works.

Now serve with some of the leftover salsa from the pot. Sprinkle with a little cheddar cheese and serve with tortilla chips or Sun Chips for dipping.

Easy huh? Now for the supreme awesomeness that was the dessert.

Strawberry Cheesecake MousseStrawberriesCool Whip Lite (small tub)One package Jello Cheesecake Sugar-Free Fat-Free Instant Pudding

Mix the Jello with half the milk (one cup instead of two) and whip as directed. Add one cup of the Cool Whip and beat until mixed. Refrigerate or use immediately. Slice the strawberries and add to the cheesecake mousse.

Boom, you’re done. Good luck getting it to the fridge to store it after you’ve had a taste. Jack added a crushed Heath candy bar to his to give it extra kick. And the best part is, it’s only 6 grams of sugar for a half cup of the mousse, and three grams of sugar for four sliced strawberries.

This dinner was amazing. It was exactly what I needed to get back on the wagon after my super binge. The best part about it is this was BETTER tasting than my binge food.
