Fit for ’15: Sirloin Salpicon

SIRLOIN SALPICON

Yogurt dressing
1 cup plain yogurt
1 tsp pureed chipotle
cup cilantro, chopped
1 tsp lemon juice
1 pinch ground cumin

Mix all ingredients together, and refrigerate for an hour.

Pico de gallo
2 ea tomato, diced
ea yellow onion, diced
1 ea jalapeno, diced
1 tsp lime juice
1 tsp cilantro, chopped

Mix all ingredients and leave at room temperature for an hour.

Salpicon Salad
1 serving

Toss 2 cups chopped romaine lettuce with cup pico de gallo, 2 Tbsp. dressing and 1 tbsp cheese (if desired). Grill 4oz sirloin for 10 minutes, flipping halfway. Top salad with sliced steak and avocado (if desired).

Toss lettuce, pico, dressing and cheese in a bowl. Top with steak and avocado, serve chilled.
