Fit for ’15: Christmas party appetizers

When planning Christmas or holiday parties, it can be easy to turn to Yule logs, and cheese balls and crackers for appetizers. But with a little effort and planning, hors d’oeuvres can be savory and healthy.

Green Chile Salsa
Yields 2-3 cups, 4-6 portions (depends on tomato and tomatillos)

1 tbsp olive oil
1/4 cup onion, diced
2 tbsp garlic
1 jalapeno
1 cup diced and roasted green chile
5 tomatillos
1 tomato
10 stems of cilantro
1/2 cup water, stock or broth
1/2 tsp vinegar
Salt and pepper to taste

Saut onion and garlic in oil for 5 minutes on medium high heat.
Add the remaining ingredients and cook for 15 minutes on low heat.
Cool at room temp and puree.

Grain Salad
2 cups assorted cooked whole grains
1 cup Green Chile Salsa
1/4 sliced lettuce (spinach or assorted greens)
1/4 cup diced tomatoes
Mix grains, salsa and lettuce

Place on spoons, in cups or serve as an entre with your choice of protein. Top with diced tomatoes.

Smoked Salmon Canapes
4 servings
1 4 oz packet of smoked salmon
4 slices multigrain bread (ends can be trimmed and slices can be cut into 1/4s)
1 cup spinach or mixed greens
1/2 cup green salsa
1 tomato, diced

Toast sliced bread in a 400 degree oven.
Top with spinach, salmon, salsa and tomatoes evenly.
