FIT FOR ’15: New Year’s Eve drinks

Many Americans cite weight loss as their top resolution for the start of a new year.

As some alcoholic drinks and cocktails are loaded with calories and sugar, they can make reaching that goal more difficult as the ball drops and the clock strikes midnight on 2016.

El Paso Community College Chef Daniel Guerra created a lighter way to toast in the new year.

Remember, please drink responsibly, have a designated driver, call for a ride and never drink and drive.

MAKES 32-34 SERVINGS

2 cups OJ
1 cup liquor of choice (rum, vodka, tequila)
1 oz gelatin
1 cup diced fruit
2 tbsp Splenda, stevia or sugar substitute

Heat liquids in a double boiler with gelatin and whisk vigorously. Add fruit and sweetener and combine. Pour into cups for molding and cool.

*Temperature of liquid when adding gelatin should be no warmer than 80 degrees.

*Abstain from adding gelatin to make simple fruity beverage.
